When our friend Stephanie Holbrook from KetoEndurance asked to have us on her podcast, we happily agreed because we always like talking with Stephanie. As beef producers, we were surprised to talk about pork--and provide the best arguments for bacon, no less! There are great pastured pork producers in the Savory Global Network and in our community. In fact, we find pastured, local pork so superior in nutrient profile and flavor to commercially available products, that we fill our freezer with Surprise Valley Grown bacon--and a whole heritage breed hog from our young neighbor.We discuss Barry Estabrook's book Pig Tales, how pigs impact the environment and can be part of a holistic grazing plan, and much more.
